Preserving

A good glut is a lovely problem to have, right up until you're staring at three kilos of beetroot and no plan. Preserving is how you turn a busy fortnight in the garden into a full larder that carries you through winter, and most of it is far simpler than it looks.

This is the hub for our preserving guides: vinegar pickles, jams and jellies, chutneys and the rest. Everything here is written for UK kitchens and UK produce, with clear food-safety notes so you know what's safe to keep on the shelf and what belongs in the fridge.
