Foraged elderflowers and hedgerow fruit in the kitchen

Foraged & Wild Food

A hedgerow is a larder if you know what to look for. This is where the foraging basket meets the kitchen: what to do with elderflower in June, blackberries in September and sloes after the first frost, turning a free wild harvest into cordials, jams and country liqueurs. The gathering is half the fun and the making is the other half.

Everything here is British and seasonal, with the same firm rule that runs through all our foraging: only ever cook with something you're 100% sure of. Pair these recipes with our foraging guide and you've got the whole loop, from hedge to glass to shelf.
