"Are non-stick pans toxic?" is one of those kitchen questions that attracts a lot of heat and not much light. You will find articles insisting your frying pan is quietly poisoning your family, and others insisting there is nothing to think about at all. The honest answer sits between the two, and it is more reassuring than the scare stories: a non-stick pan used sensibly is not poisoning your dinner. But there are a couple of genuine things worth understanding, and one hazard that is real enough to state plainly. This page is the measured version, with the sources shown so you can check them yourself.
This is general information, not medical advice. Where health matters, we have leaned on tier-one sources: DEFRA and the Drinking Water Inspectorate, the Royal Society of Chemistry, the American Cancer Society and a poison-control centre. Read the caution below, then the nuance.
What "non-stick" actually is
When people say Teflon, they usually mean the coating, and Teflon is simply a well-known brand name. The material underneath most non-stick pans is polytetrafluoroethylene, or PTFE, a slippery, heat-resistant plastic known as a fluoropolymer. It is what gives a non-stick pan its low-friction surface, and manufacturers state that PTFE is chemically inert and is not absorbed into the body even if a small amount is swallowed by accident.
PTFE belongs to a much larger group of chemicals called per- and poly-fluoroalkyl substances, or PFAS. This is the phrase you will have seen described as "forever chemicals", because they are extremely persistent and do not readily break down in the environment or in our bodies. The Royal Society of Chemistry notes there are thousands of different PFAS, valued in industry for exactly the qualities that make non-stick pans useful: they resist grease, water and heat. So PTFE being "a PFAS" is true, but it is worth being precise about what that does and does not mean for the pan in your hand, which is the whole point of the next section.
The actual evidence, without the fear
Here is where the careful distinctions matter, because the strongest claims tend to blur several different things together.
PTFE in the finished pan is inert. At normal cooking temperatures, the solid coating is stable and is regarded as biologically inert. A flake of it that comes off into your food and is swallowed passes straight through you, which is why it is not considered a poisoning risk. The American Cancer Society is direct on this point, stating there are no proven risks to people from using cookware coated with Teflon or other non-stick surfaces. That is the single most important sentence on this whole page.
Overheating is the genuine risk. PTFE coatings are stable up to around 260°C. Push them well beyond that and the coating begins to degrade and can release fumes. You will not get there with food in the pan, because the water and food keep the surface much cooler. The classic mistake is preheating an empty pan on high, which can climb past that threshold in a few minutes. Breathing those fumes can cause polymer fume fever, nicknamed "Teflon flu": a temporary illness with chest tightness, a cough, headache and a raised temperature that usually clears within a day or two. It is uncommon, it is tied to overheating rather than normal cooking, and it is entirely avoidable.
Pet birds are the exception to "low risk". For birds, this is not a mild issue. Their respiratory systems are exquisitely sensitive, and fumes from an overheated coated pan can kill a caged bird, sometimes at lower temperatures than would trouble a person and often before anyone notices a smell. If birds share your home, treat this as a firm rule, not a footnote.
PFOA is a real story, but a historical one. Much of the alarm around non-stick traces back to PFOA, a PFAS chemical once used as a processing aid to help make the coating. PFOA has been linked to health harms in studies, largely at the high exposure levels seen in contaminated drinking water and in factory workers, not from cooking. The key point is that it has been dealt with: PFOA, its salts and related compounds were restricted across the EU under the Persistent Organic Pollutants Regulation from July 2020, a restriction retained in Great Britain, and major pan makers had already stopped using it years earlier, around 2012 to 2015. A pan bought new today is made without PFOA. So the PFOA concern is mostly about how coatings used to be manufactured, not about the pan on your hob now.
The PFAS picture: a fair reason some people choose to avoid them
There is one part of the concern that we think it is only honest to acknowledge, rather than wave away. PFAS as a whole class are a legitimate environmental issue, quite separately from whether your individual frying pan is safe to cook in.
Because PFAS are so persistent, they build up. The Royal Society of Chemistry and the Drinking Water Inspectorate both describe PFAS turning up in water courses, soils, wildlife and, at very low levels, in the blood of almost everyone. In February 2026 the UK Government published its first-ever PFAS Plan, describing these "forever chemicals" as "one of the most pressing environmental challenges of our time" and setting out co-ordinated action across regulators and industry, including a planned consultation on a statutory limit for PFAS in England's public water supplies. DEFRA is clear that UK tap water is among the highest quality in the world and that there is currently no evidence of PFAS above permitted levels in England and Wales, so this is about long-term stewardship, not a tap-water emergency. Non-stick cookware is only one of many PFAS uses, alongside water-repellent clothing, food packaging and firefighting foams.
What does that mean for you and a frying pan? It means the strongest, most defensible reason to prefer a PFAS-free pan is environmental and precautionary, rather than a belief that your current pan is harming you. Both things can be true at once: your non-stick pan in normal use is not poisoning you, and you might still reasonably decide you would rather not buy more PFAS into your kitchen. That is a values choice, and a legitimate one. We would just rather you make it with the facts straight than out of fear.
How to use non-stick safely
If you are keeping your non-stick pans, and most households sensibly will, a handful of habits removes essentially all of the genuine risk.

Never preheat it empty
Always add a little oil or food before it goes on the heat. An empty dry pan is what overheats quickest.

Keep to low or medium heat
Non-stick is made for eggs, pancakes and gentle frying, not fierce searing. If you want a screaming-hot pan, reach for cast iron or stainless steel.

Ventilate
Use the extractor or open a window while cooking, which is good kitchen practice generally.

Use kind utensils
Wooden or silicone tools, not metal, and no abrasive scourers or wire wool, so the coating stays intact.

Keep pet birds out of the kitchen
Non-negotiable if you have birds, because overheated coatings can be fatal to them.

Replace flaking or peeling pans
A lightly marked pan that still works is fine. A coating that is visibly shedding has done its service.
If food is baked on and you are tempted to scrub hard, don't. Soak the pan in warm water with a little washing-up liquid, and for stubborn residue a paste made with a little water works gently. PFAS-free alternatives, honestly compared
If you would rather cook on something without PFAS at all, you have good options, and each has genuine trade-offs. There is no single perfect pan: the honest position is that the right choice depends on what you cook and how much upkeep you enjoy.

Two honest caveats. First, "ceramic" pans are the ones most often mis-sold as a magic answer: they really are PFAS-free, but be realistic that the non-stick tends to fade within a couple of years, so they are not the buy-it-for-life choice their marketing implies. Second, cast iron and carbon steel are the closest thing to a permanent, plastic-free non-stick surface, but only if you are happy to season and look after them. So, are non-stick pans toxic? The bottom line
No, not in the sense the question usually implies. The coating is inert, the finished pan is not leaching poison into your food, PFOA is banned and gone from new pans, and the health authorities are clear that there is no proven risk from cooking on non-stick. The two things that are true and worth acting on are narrow and manageable: do not overheat an empty pan, and keep pet birds out of the kitchen. Beyond that, if you would prefer to step away from PFAS on environmental grounds, that is a perfectly reasonable choice, and cast iron, carbon steel, stainless steel and enamelled cast iron are all excellent, long-lived answers.
