"Don't worry, it's all within legal limits." It's the line that ends every conversation about pesticides on food, and it sounds like reassurance. But once you know what those limits actually are, and what they are not, it sounds more like a sleight of hand. About half of all the food the UK government tests carries detectable pesticide residues, and the fruit and veg most of us eat carries them more often than that. None of which means you should eat less veg, and we'll say that loudly and often, because it's the most important sentence on this page. It does mean the confident "it's fine" deserves a closer look. Here's the honest picture, and what you can actually do about it.

Start with the reassuring facts, because they're real. In the latest UK monitoring, almost 98% of samples were within the legal limits, and every sample with a detectable residue is risk-assessed for consumers. Good.

Now the part that reframes it. The legal limit for a pesticide on a crop is called a Maximum Residue Level, an MRL, and here is what the regulator itself says about them, in its own annual report:

And detectable residues are common. In the most recent official testing, around half of all samples carried them, and because that programme includes low-residue foods like cereals, the figure for fresh fruit and veg specifically is higher, roughly 60% of non-organic produce, according to Pesticide Action Network UK.

The bit the safety check misses: the cocktail

Here's the genuine gap, and it's important to state it honestly rather than overstate it. The safety assessment behind those limits looks at one pesticide at a time. But a single grape can carry several different residues, a fruit salad combines more, and a day's food more still. Whether those low-dose mixtures add up to real harm is not settled, it's a recognised, under-studied gap rather than a proven danger, but it is a reasonable thing to want to minimise, and it's simply not part of how the limits are set.

The mixtures are concentrated in particular produce. PAN-UK compiles the government's testing into a "Dirty Dozen", the produce most likely to carry residues of more than one pesticide. Over recent years that list has been topped by grapefruit, soft citrus like clementines, oranges and lemons, strawberries, grapes, cherries, pears and pre-packed salad and herbs, with the great majority of samples carrying multiple residues.

British beats imported, by a lot

This is the most useful and least-reported fact in the whole picture, and it points straight at the homestead answer. When PAN-UK broke the government data down by origin, imported produce was markedly worse than home-grown: about 55% of imported items carried pesticide cocktails against 31% of UK-grown, imports were around two and a half times more likely to exceed the legal limit, and testers found 127 different pesticides on imported food versus 60 on British. Buying British, and better still growing your own, isn't just a food-miles choice. It measurably cuts what's on your plate.

What's done to it after it's picked

Residues aren't the whole story. A supermarket's job is shelf life, and a fair amount happens to produce between the field and your fruit bowl.

  • Waxes and coatings. Apples, pears and citrus are often given a food-grade wax to slow moisture loss and add shine. Harmless in itself, but the wax is frequently the carrier for post-harvest fungicides.
  • Citrus fungicides, and why zest is the catch. Citrus is routinely treated after picking with fungicides such as imazalil and thiabendazole to stop it going mouldy, which is exactly why it tops the residue lists. The practical point: "unwaxed" does not mean "untreated", and you should not zest the peel of non-organic citrus for cooking unless it's labelled as suitable for that.
  • The year-old apple. A British apple in a shop in July was very likely picked the previous autumn and held for months in controlled-atmosphere storage, often with a treatment (1-MCP, sold as SmartFresh) that blocks the ripening signal so it stays firm. It's safe, but it's a logistics marvel, not fresh, and it's a good argument for eating your own in season. Bananas and tomatoes, by contrast, are shipped unripe and gassed with ethylene to ripen to order.
  • A genuine "it was banned" story. Chlorpropham (CIPC), the sprout-suppressant once used on more than 90% of Britain's stored potatoes, was banned in Great Britain in 2020. Because it lingers in old store buildings, trace residues can persist even now, an honest example of a chemical outstaying its own ban.

Does washing it off work?

Partly, and it's worth doing, as long as you're honest about the limits.

Getting the most residue off

    Rinse everything under running water

    A good rinse under the cold tap, rubbing firm produce with your hands, removes a meaningful share of surface residues and dirt. It's the single most worthwhile step.

    Soak the worst in bicarbonate of soda

    For the high-residue items, a soak in water with a teaspoon of bicarbonate of soda for 10 to 15 minutes lifts more surface residue than plain water, then rinse. It won't reach anything inside the flesh.

    Peel where it counts

    Peeling removes nearly all residues, so it's worth it for treated non-organic citrus you'd zest, or a waxed apple for a small child. But peeling also strips fibre and skin nutrients, so don't peel produce you'd happily eat skin-on.

    Know what washing can't do

    Systemic pesticides are taken up inside the plant as it grows and cannot be washed off at all. So washing reduces your exposure, it doesn't make conventional produce pesticide-free.

The homestead answer: grow it, or shop smarter

None of this is a counsel of despair, and it's certainly not a reason to eat less veg. It's a short list of things that genuinely give you back some control.

  • Grow your own. The only way to know exactly what was, and wasn't, sprayed on your food. You also pick at ripeness instead of eating something gassed or stored for a year, and the food miles are the length of your garden.
  • Buy organic for the worst offenders. Organic produce almost never carries a detectable residue, so if the budget is tight, spend it on the high-cocktail items (soft citrus, grapes, strawberries, pre-packed salad) and don't pay extra to go organic on the naturally low-residue ones.
  • Buy British, local and seasonal. As the import figures show, it measurably cuts residues, and it's fresher.
  • Wash everything, peel the worst. Cheap, easy, and it works on surface residues.

The thread is agency. You can't fix the whole food system, but you can control your own plot, your shopping list and your kitchen sink.

What about nutrients, and glyphosate?

Two honest footnotes, because you'll have heard both.

Nutrient decline. There's a real, cited finding that fruit and veg carry less of some minerals than they did decades ago (one well-known analysis found declines in calcium, iron and vitamin C over the twentieth century). But we have to be straight about the caveat: most researchers think this is largely the "dilution effect", modern varieties bred for size and yield concentrate a bit less mineral, plus changes in testing methods over 70 years, rather than proof of "dead soil". The decline is modest and confounded, so growing heritage varieties in well-fed living soil is a fair reason to expect better flavour and a little more nutrition, but a supermarket carrot is not "nutritionally empty".

Glyphosate. The world's most-used weedkiller, and a genuinely unresolved dispute. In 2015 the World Health Organization's cancer agency, IARC, classified it as "probably carcinogenic to humans". European and UK regulators, weighing the evidence differently, disagree, and the EU re-approved it. We won't pretend that's settled either way. But an active scientific disagreement about a probable carcinogen is reason enough for a homesteader to prefer not to spray it around their own vegetables.

To end where we began, because it matters most: eat more fruit and veg, not less. This was never about frightening you off produce. It's about knowing what's on the shop-bought version, and enjoying the quiet advantage of the version you grew yourself.
