A knife is not blunt because it has lost anything you can see. Look closely and the steel is all still there. What has happened is that the fine edge, which was once two smooth bevels meeting at a line too thin to see, has rounded over into a soft, reflective curve. A rounded edge cannot part what it touches, so it skids and crushes instead of slicing. Sharpening is simply the act of grinding those two bevels back until they meet again at a crisp apex. Do that well and you get an edge that falls through a tomato under its own weight.

There are several ways to get there, and they are not equals. A whetstone gives the best edge and removes the least metal, so your knives last for decades. It is also the method worth learning properly, because once it clicks it is quick, cheap and quietly satisfying. The other tools, pull-through sharpeners, honing steels and electric machines, each have a place, and we will be honest about where that place is. This is a practical guide, so read the safety note, then work through the whetstone method with a knife in your hand.

The principle: what "sharp" actually is

Picture the very edge of the blade in cross-section. Two ground faces, the bevels, slope in from each side and meet at a line. When that line is genuinely a line, the knife is sharp. Every time you cut, chop on a board or wipe the blade, that delicate meeting point wears and folds a fraction, until it is no longer a line but a tiny rounded ridge. That ridge reflects light, which is why a blunt edge glints when you tilt it to a lamp and a truly sharp one does not.

So sharpening is not sanding the whole blade. It is working the two bevels near the edge until they meet cleanly again. A typical kitchen or outdoor knife is double-bevel, ground on both sides, so you share the work evenly between them. Get that idea and the rest is just method and practice.

Choosing your whetstone and grits

Grit is the coarseness of the stone, measured like sandpaper: the lower the number, the coarser and faster-cutting, the higher the number, the finer and more polishing. For a knife that is simply dull, a medium stone of about 600 to 1000 grit does the real sharpening, and a finer stone of roughly 2000 to 6000 grit refines the edge to a keener finish. Only start on a coarse stone of 120 to 400 grit if the blade is chipped or badly neglected, because coarse grits chew through metal quickly and you do not want to lose steel needlessly.

If you buy just one stone, make it a combination stone with about 1000 grit on one face and a finer grit such as 3000 or 6000 on the other. That single stone will sharpen almost anything in a home kitchen or on a smallholding. Work up through the grits in order and never skip a big jump, because a fine stone struggles to erase the deep scratches a coarse one leaves, and skipping actually costs you time.

Stones also differ in how they are lubricated. Water stones cut fast and are the popular choice for kitchen and hunting knives, but they need water. Some are porous and want a proper soak until the bubbles stop rising, which can be a few minutes or up to around 45 minutes for a thirsty stone; splash-and-go water stones need only surface water. Oil stones, such as traditional Arkansas stones, cut more slowly and use a light oil. Diamond and ceramic stones are used dry or with a spritz and stay flat for ages. Whichever you have, follow the maker's guidance, and keep the surface wet or oiled throughout, because that fluid floats the ground-off metal away and stops the blade catching.

The whetstone method, step by step

This is the core of the whole guide. Take your time the first time, and do not worry about speed. Consistency of angle beats everything else.

Sharpening a knife on a whetstone

    Prepare the stone

    Soak or wet it according to the type, and set it on a non-slip surface such as a damp cloth, wet edge of a coarse stone at the top away from you.

    Find your angle

    Lay the blade flat, then lift the spine to about 15 to 20 degrees, roughly the height of two stacked pound coins under the spine. An angle guide clipped to the spine helps if you are new to it.

    Take the first strokes

    Starting near the top of the stone, draw the blade smoothly across and down, leading with the edge and sweeping from heel to tip so the whole edge is worked. Use light, even pressure, lock your wrist and move from the shoulder.

    Feel for the burr

    After a set of strokes, feel gently down towards the edge on the opposite side. A tiny wire, the burr, will form when you have reached the true edge. On a dull knife this can take 30, 40 or even 50-plus passes, so keep going until the burr runs tip to heel.

    Do the other side

    Flip the knife and repeat, aiming for roughly the same number of strokes so the edge stays centred. Work until you feel the burr flip back to the first side along the whole length.

    Refine on the fine grit

    Move to the finer face or stone and repeat the same strokes on both sides with a lighter touch. This polishes the bevels and shrinks the burr to almost nothing.

    Remove the burr and strop

    Take a few very light alternating strokes to shear off the last of the burr. Better still, finish on a leather strop: draw the blade backwards, spine first, several times each side to align and polish the apex.

    Clean up and test

    Wipe the blade, rinse and dry the stone, and slice a sheet of paper to check the edge glides cleanly. If it snags anywhere, that spot needs a few more strokes.

Testing sharpness, safely

The paper test is all you need. Hold a sheet of printer or newspaper by its top edge and slice downwards and outwards through it. A sharp knife slides through with a clean, quiet cut all along the edge; a blunt patch will snag, tear or fold the paper over. Work along the whole blade, because it is common to have one section keener than another. The only time you touch the edge is the light lengthwise fingertip feel for the burr while sharpening. Never run a thumb across the edge to test it, and never wipe towards the edge.

The other methods, and where they fit

The whetstone is the gold standard, but it is not the only tool, and each of the others earns its keep in the right situation.

The honing steel is the one most people own and the one most people misunderstand. A plain steel rod does not sharpen. It straightens an edge that has rolled slightly over in use, and it removes almost no metal, which is why you can run a knife along it often, even each time you cook. It buys you longer between real sharpenings, but when honing stops bringing the edge back, only a stone will do. Ceramic and diamond rods are a halfway house: they carry an abrasive and do take off a little metal, so they can lightly sharpen as well as realign.

Pull-through sharpeners are quick and need no skill, which is their appeal. Drag the knife through the slots a few times and a dull kitchen knife will cut again. The trade-off is that they set the angle for you, often steeper than ideal, and the fixed carbide teeth tear away a lot of steel, so repeated use wears a knife down and can leave a rough edge. Fine as an emergency fix for a cheap everyday knife; not something to use on a knife you care about.

Electric sharpeners are the fastest way through a pile of knives and give a serviceable edge with almost no learning. But like manual pull-throughs they grind away a great deal of metal, which shortens a knife's life and can ruin a forged blade with a bolster. If you value your knives and have twenty minutes, the stone wins on every count except speed.

Common mistakes

The commonest fault by far is giving up before the burr forms. A dozen strokes rarely reaches the true edge on a dull knife; you may need 50 or more, so keep going until you feel that wire run the whole length. The next is letting the angle wander, which usually happens when people sharpen from the wrist instead of moving the whole arm from the shoulder. Others press too hard, which removes metal fast but makes the angle harder to hold, when light and consistent is what you want. And many forget to remove the burr, leaving a knife that feels sharp for a moment then folds over and goes dull almost at once. Take it off with light finishing strokes or a strop.

Caring for your stone

A stone only sharpens well if it stays flat. Water stones dish out over time, developing a hollow in the middle that makes a consistent angle impossible, and you will notice the blade rocking as you work. Flatten them every two or three sessions by rubbing the stone against a diamond flattening plate under running water. A reliable trick is to scribble a pencil grid across the face first, then flatten until every pencil mark has gone, which tells you the whole surface is level again.

Keep the stone clean too. Rinse a water stone under the tap and scrub it with a stiff brush to clear the metal particles out of the surface. Let it dry fully before you put it away, because trapped moisture can crack a stone in the cold or grow mould, and store it flat in a dry spot. An oil stone is wiped clean and kept away from dust. Treat the stone as part of the kit, not a consumable, and it will outlast many knives.

Where a sharp knife earns its keep

Everything above applies well beyond the kitchen, though the kitchen is where most of us notice a keen edge first: clean slices, less bruised herbs, safer cutting because the blade goes where you point it. The same whetstone sharpens a garden or pocket knife, and it is essential for whittling and green woodwork, where a truly sharp edge is the difference between a clean shaving and a torn, fibrous mess. The technique is one skill that quietly improves half the tools you own. Learn the burr, hold your angle, and the rest is practice.
