How to choose kitchen kit
- Preserving: pan and jars first
- A wide maslin pan and a batch of proper Kilner or Le Parfait jars cover most jam and chutney making. Check jar seals each season and replace rubbers, not whole jars.
- Dehydrator or oven
- For occasional drying, a low oven works; for regular batches a dehydrator with a timer and adjustable heat earns its shelf space and uses far less energy.
- Buy for the harvest you have
- Match kit to what you actually grow: a pressure canner matters far less in the UK (where high-sugar and high-acid preserving dominates) than it does in the US.
- Bakeware that lasts
- Heavy-gauge tins and a decent banneton outlast a drawer of thin non-stick. Season and dry cast iron properly and it's a once-in-a-lifetime buy.
